CHOCOLATE SPECIAL

My first recipe is for oat cookies. This recipe is very adaptable. You can add chocolate chips, ginger and many other things to them. They are very soft cookies which melt in your mouth, delicious.
Oat Cookies.
Ingredients
8ozs (1 cup) Margarine/butter
11oz (1¼ cup) Light Brown Sugar.
1 teaspoon Baking Soda
1 teaspoon Vanilla Essence
½ teaspoon Salt
2 beaten eggs
24oz (3 cups) Oats
2.5oz (½ cup) Flour
Method
Cream together the Sugar and Margarine. Add the soda, salt, beaten eggs and vanilla and beat well. Fold in the flour and oats.
Roll into 1 inch balls and place on a lined baking tray. Make sure you leave plenty of space between balls as these cookies spread out.
Place trays in a pre-heated oven at 170oC/330oF/Gas Mark 3, and bake for 10 minutes.
Delicious straight from the oven.
My second recipe is for English Shortbread. This is delicious and don't be put off by the semolina. It's what makes it so nice.
English Shortbread.
Ingredients
8oz (1 cup) Butter
4oz (½ cup) Caster Sugar
2oz (¼ cup) Semolina
10oz (1 ¼ cups) Plain Flour
Method
Cream together the butter and sugar. Add flour and semolina to form a soft dough. Press into 2 7" cake tins. Prick the surface with a fork and sprinkle with a little sugar.
Chill in the fridge for 15 minutes before baking for 30 minutes at 170oC/330oC/Gas Mark 3.
